Stir-fried cabbage with green peas. Kobichi Bhaji is a popular vegetarian stir fry dish from the Indian state of Maharashtra. Simple, light, and easy to make. Try out this recipe that is ready in minutes.
1 cabbage (approx. 300 gms)1/2 cup green peas2 tbsp oil1 tsp mustard seeds (sarson)1 tsp cumin seeds (jeera)1/4 tsp hing (asafoetida)2 chopped green chillies1 sprig curry leaves1 tsp salt1 tbsp finely chopped coriander stems1/2 tsp turmeric powder1/2 tsp sugar1 tbsp lemon juice1 tbsp chopped green coriander leaves
To begin, chop the cabbage and keep it aside.Heat oil in a pan. Add in the mustard seeds and allow them to crackle. Next add cumin seeds, asafoetida, chopped green chillies, and curry leaves. Mix well.Add in the peas and chopped coriander stems. Saute for a minute or two.Add the cabbage, salt, sugar, and turmeric powder. Mix well. Cover with a lid and cook until done, mixing occasionally.Turn off the heat. Finish with lemon juice and chopped coriander leaves. Mix well.The Kobichi Bhaji is ready to serve. Serve hot with chapatis.
You can use frozen peas for the recipe. Be sure to thaw them first.
