For the dip combine: 2 medium cloves garlic¼ tsp salt, plus more to taste1 medium cucumber, chopped 1 cup lowfat plain yogurt1 tbsp fresh lemon juice1 tbsp extra virgin olive oil1 tbsp finely chopped fresh dill½ tsp ground black pepperServe the dip with Spicy Pickled Carrots and your favourite cracker or chip.
